In a bowl, mix 200 grams of grated paneer, 1 finely chopped onion, 1 finely chopped green chili, 1/2 teaspoon of ginger-garlic paste, 1/4 teaspoon of garam masala, 1/4 teaspoon of red chili powder, 1/4 teaspoon of chaat masala, and salt to taste. Mix well and set aside.
In another bowl, mix 1 cup of all-purpose flour (maida) with a pinch of salt and 1 tablespoon of oil. Gradually add water and knead it into a smooth, soft dough. Cover and let it rest for 15-20 minutes.
Divide the dough into equal portions and roll each portion into a thin, round shape (like a roti).
Place a portion of the paneer filling in the center of the rolled dough and fold the edges to seal it completely, forming a roll shape.
Heat oil in a deep frying pan over medium heat. Once the oil is hot, carefully slide the paneer rolls into the oil and fry them until they turn golden brown and crispy.
Remove the paneer cheese rolls from the oil and place them on a paper towel to absorb excess oil.
Serve hot with green chutney or tomato ketchup.
