Cut 250 grams of paneer into small cubes and set aside.
In a bowl, mix 2 tablespoons of besan (gram flour), 1/2 teaspoon of red chili powder, 1/4 teaspoon of turmeric powder, 1/2 teaspoon of garam masala, 1/2 teaspoon of chaat masala, 1/2 teaspoon of amchur (dry mango powder), and salt to taste.
Add 2 tablespoons of water to the spice mixture and mix well to form a thick paste.
Coat the paneer cubes evenly with the spice paste and let them marinate for 15-20 minutes.
Heat 2 tablespoons of oil in a non-stick pan over medium heat.
Add the marinated paneer cubes to the pan and shallow fry them until they turn golden brown on all sides. Remove the paneer cubes from the pan and set aside.
In the same pan, add 1 teaspoon of cumin seeds and let them crackle.
Add 1 finely chopped onion and 1 finely chopped green chili to the pan and sauté until the onions turn translucent.
Add the fried paneer cubes back to the pan and toss everything together for 2-3 minutes, ensuring the paneer is well coated with the onion and chili mixture.
Garnish with chopped coriander leaves and serve hot with roti or paratha.
