Palak Gosht

Remove the bones from 700g of lamb, reserving the bones for later use.

In a blender, puree 5cm of gingerroot, 2 cloves of garlic, and 2 green chilies.

Whisk 1/2 cup of natural yogurt and add it to the puree along with 1/2 teaspoon of cumin powder.

Marinate the lamb meat in the yogurt mixture for at least 1 hour, or longer if possible.

Heat 3 tablespoons of oil in a cooking pot, adding 1/2 teaspoon of cinnamon, 1 teaspoon of cardamom powder, and 1/4 teaspoon of clove.

When the oil is hot, add 225g of chopped onion and fry for 15 minutes over low to moderate heat.

Add 1 teaspoon of coriander powder to the onions and sauté for 2 minutes, stirring continuously.

Add 1/2 teaspoon of cumin powder and 1/2 teaspoon of hot red chili powder, then add a little water after 10 seconds.

Cook the mixture for another minute or two.

Add the marinated lamb meat and reserved bones to the pot, stirring well, and cook over moderate heat for 10 minutes until the yogurt is absorbed.

Sauté the meat for an additional 3 minutes, then add 2 medium chopped tomatoes and 1 tablespoon of tomato paste, cooking for a couple more minutes.

Add 1 1/4 cups of water and 1 teaspoon of salt to the pot, then turn the heat to low and cover with a lid, allowing it to simmer.

When the meat is almost done, add 1 box of chopped, defrosted, and drained spinach, mixing well and tasting for salt.

Cook the mixture for 5 minutes uncovered.

Before serving, discard the bones, sprinkle the dish with a pinch of nutmeg, and add 1 1/2 tablespoons of butter if desired.
