Onion Rava Dosa
Onion Rava Dosa is a crispy, lacy, and delicious South Indian crepe made with a combination of semolina, rice flour, and all-purpose flour, topped with golden-brown onions. Ingredients: Rice flour, Onion, Sooji, Cooking oil, Cumin seeds, Salt, Green chilli, Coriander, Maida

In a large mixing bowl, combine 100 grams of semolina (rava), 100 grams of rice flour, and 50 grams of all-purpose flour (maida).

Gradually add 500 ml of water while continuously whisking to avoid lumps. The batter should be thin and flowing.

Add 1 teaspoon of cumin seeds, 1 teaspoon of finely chopped green chilies, 1 tablespoon of finely chopped coriander leaves, and salt to taste. Mix well and let the batter rest for 15-20 minutes.

Heat a non-stick pan or tawa over medium heat. Sprinkle some water to check if the pan is hot enough. If the water sizzles and evaporates, the pan is ready.

Finely chop 2 medium-sized onions and spread them evenly on the hot pan.

Stir the batter well and pour a ladleful of batter over the onions in a circular motion, starting from the outer edge and moving towards the center. Fill any gaps with more batter.

Drizzle 1 teaspoon of oil or ghee around the edges of the dosa and cook until the bottom turns golden brown and crispy.

Carefully flip the dosa and cook for another 1-2 minutes.

Fold the dosa in half and transfer it to a serving plate. Repeat the process for the remaining batter.
