In a bowl, mix 2 cups of whole wheat flour (atta) with a pinch of salt and 1 tablespoon of oil. Gradually add water and knead the dough until it becomes soft and pliable. Cover the dough and let it rest for 15-20 minutes.
Finely chop 2 large onions and mix them with 1/2 teaspoon of grated ginger, 1/2 teaspoon of finely chopped green chilies, 1/4 teaspoon of red chili powder, 1/4 teaspoon of garam masala, 1/4 teaspoon of cumin seeds, and salt to taste. This will be the onion stuffing.
Divide the dough into equal portions and roll each portion into a ball. Flatten the ball slightly and place a spoonful of the onion stuffing in the center. Bring the edges together and seal the stuffing inside. Gently flatten the stuffed dough ball.
Dust the working surface with some dry flour and gently roll out the stuffed dough ball into a circular paratha, ensuring the stuffing doesn't come out.
Heat a tawa or griddle over medium heat. Place the rolled paratha on the tawa and cook until small bubbles appear on the surface. Flip the paratha and cook the other side until golden brown spots appear.
Apply a little ghee or oil on both sides of the paratha and cook until it turns crispy and golden brown on both sides. Repeat the process for the remaining dough balls and stuffing.
