Finely chop 1 large onion and 2 medium-sized tomatoes. Set aside.

In a pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onions and sauté until they turn translucent and slightly golden, about 5-7 minutes.

Add the chopped tomatoes to the pan and cook for another 5 minutes, until the tomatoes soften and release their juices.

Season the onion-tomato mixture with salt, pepper, and 1 teaspoon of dried basil. Stir well and cook for another 2 minutes. Remove from heat and let it cool slightly.

Preheat your oven to 180°C. Slice a baguette or Italian bread into 1 cm thick slices and arrange them on a baking tray.

Drizzle some olive oil over the bread slices and toast them in the oven for 5-7 minutes, or until they turn golden and crispy.

Spoon the onion-tomato mixture onto the toasted bread slices and garnish with fresh basil leaves or chopped coriander.
