Oats Idli
Oats Idli is a healthy and delicious twist on the traditional South Indian idli, made with nutritious oats, semolina, and yogurt. It's a perfect breakfast option that is both filling and easy to digest.

Dry roast 1 cup of oats in a pan on medium heat for 3-4 minutes until they turn slightly golden brown. Allow them to cool and then grind them into a fine powder.

In the same pan, dry roast ½ cup of semolina (sooji) for 2-3 minutes until it turns slightly golden brown. Set aside to cool.

In a large mixing bowl, combine the ground oats, roasted semolina, 1 cup of yogurt, and ½ cup of water. Mix well to form a thick batter. Let it rest for 10-15 minutes.

Meanwhile, prepare the tempering by heating 1 tablespoon of oil in a small pan. Add 1 teaspoon of mustard seeds, 1 teaspoon of urad dal, 1 teaspoon of chana dal, and a pinch of asafoetida. Fry until the dals turn golden brown.

Add the tempering to the batter along with 1 finely chopped green chili, 1 grated carrot, a handful of chopped coriander leaves, and salt to taste. Mix well.

Grease the idli moulds with a little oil. Pour the batter into the moulds, filling each cavity about ¾ full.

Steam the idlis in a steamer or pressure cooker (without the whistle) for 10-12 minutes on medium heat. Check for doneness by inserting a toothpick; if it comes out clean, the idlis are ready.

Remove the idlis from the moulds and serve hot with coconut chutney and sambar.
