Mutton Dum Biryani
Mutton Dum Biryani is a mouth-watering, aromatic, and flavorful Indian dish made with succulent mutton pieces, fragrant basmati rice, and a blend of exotic spices, cooked in a slow 'dum' process. Ingredients: Mutton, Basmati rice, Turmeric powder, Milk, Biryani masala, Green cardamom, Cinnamon stick, Lemon, Clove, Coriander, Saffron, Bay leaf, Onion, Ghee, Red chilli powder, Mint leaves, Curd, Ginger garlic paste

Wash and soak 500 grams of basmati rice for 30 minutes. Drain and set aside.

Marinate 1 kg of mutton pieces with 200 grams of yogurt, 2 tablespoons of ginger-garlic paste, 1 tablespoon of red chili powder, 1 tablespoon of biryani masala, 1 teaspoon of turmeric powder, salt to taste, and juice of 1 lemon. Mix well and refrigerate for at least 2 hours.

In a large pot, heat 4 tablespoons of ghee and fry 3 thinly sliced onions until golden brown. Remove half of the fried onions and set aside for garnishing.

Add the marinated mutton to the pot with the remaining fried onions and cook on medium heat for 15-20 minutes, stirring occasionally.

In another pot, bring 2 liters of water to a boil. Add 2 teaspoons of salt, 2 bay leaves, 4 cloves, 4 green cardamoms, and 1-inch cinnamon stick. Add the soaked rice and cook until it's 70% cooked. Drain the rice and set aside.

Layer the partially cooked rice over the mutton in the pot. Sprinkle the reserved fried onions, chopped coriander leaves, and chopped mint leaves on top.

In a small bowl, mix 1/4 cup of warm milk with a pinch of saffron strands. Pour this mixture over the layered rice.

Cover the pot with a tight-fitting lid or seal it with dough to trap the steam inside. Cook on low heat for 30-40 minutes until the mutton is tender and the rice is fully cooked.

Gently mix the biryani and serve hot with raita or your choice of side dish.
