Preheat the oven to 200°C.
Prepare the pizza dough by mixing 500 grams of all-purpose flour, 1 teaspoon of sugar, 1 teaspoon of salt, 1 tablespoon of olive oil, and 1 packet (7 grams) of instant yeast in a large bowl. Gradually add 300 ml of warm water and knead the dough until it becomes smooth and elastic. Cover the dough with a damp cloth and let it rest for 1 hour.
While the dough is resting, heat 2 tablespoons of oil in a pan and sauté 1 finely chopped onion until it turns golden brown. Add 200 grams of sliced mushrooms and cook for 5-7 minutes. Season with salt and pepper to taste.
Roll out the rested dough on a floured surface to form a pizza base of approximately 12 inches in diameter. Place the base on a greased pizza tray or baking sheet.
Spread 4 tablespoons of pizza sauce evenly over the pizza base, leaving a small border around the edges.
Sprinkle 200 grams of grated mozzarella cheese over the sauce, followed by the cooked mushroom and onion mixture.
Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
Remove the pizza from the oven, let it cool for a few minutes, and then slice and serve.
