Mushroom Noodles
Mushroom noodles is a delicious and flavorful Indo-Chinese dish that combines the earthy taste of mushrooms with the tangy and spicy flavors of Chinese sauces. Ingredients: Mushroom, Plain noodles, Cooking oil, Tomato sauce, Vinegar, Garlic, Spring onion, Green chilli, Onion, Ginger, Red chilli sauce, Soy sauce

Boil 200 grams of noodles as per the instructions on the packet. Drain and rinse with cold water to prevent sticking. Set aside.

In a pan, heat 2 tablespoons of oil. Add 1 teaspoon of finely chopped garlic and 1 teaspoon of finely chopped ginger. Sauté for a minute.

Add 1 finely chopped onion and 1 chopped green chili. Cook until the onions turn translucent.

Add 200 grams of sliced mushrooms and cook for 4-5 minutes until they release their moisture and become tender.

In a small bowl, mix 2 tablespoons of soy sauce, 1 tablespoon of tomato ketchup, 1 tablespoon of red chili sauce, and 1 teaspoon of vinegar. Pour this sauce mixture into the pan with the mushrooms.

Add the cooked noodles to the pan and toss well to combine with the mushrooms and sauce. Cook for 2-3 minutes, stirring occasionally.

Garnish with chopped spring onion greens and serve hot.
