Mushroom Manchurian
Mushroom Manchurian is a delicious Indo-Chinese fusion dish that combines the earthy flavors of mushrooms with a tangy, spicy sauce. It's perfect as a starter or a side dish with fried rice or noodles. Ingredients: Corn starch, Mushroom, Maida, Spring onion, Garlic, Green chilli, Ginger, Onion, Tomato sauce, Capsicum, Red chilli sauce, Ginger garlic paste, Soy sauce, Black pepper powder, Salt, Cooking oil

Clean and cut 250 grams of mushrooms into quarters. Set aside.

In a bowl, mix 3 tablespoons of cornflour, 3 tablespoons of all-purpose flour (maida), 1/2 teaspoon of ginger-garlic paste, 1/4 teaspoon of black pepper powder, and salt to taste. Add water as needed to make a thick batter.

Heat oil in a kadai or deep frying pan over medium heat. Dip the mushroom pieces in the batter and deep fry them until golden brown. Remove from oil and place on a paper towel to drain excess oil.

In another pan, heat 2 tablespoons of oil. Add 1 tablespoon of finely chopped garlic, 1 tablespoon of finely chopped ginger, and 2 finely chopped green chilies. Sauté for a minute.

Add 1/4 cup of finely chopped onions and 1/4 cup of finely chopped capsicum. Cook for 2-3 minutes until the onions turn translucent.

In a small bowl, mix 2 tablespoons of soy sauce, 2 tablespoons of tomato ketchup, 1 tablespoon of red chili sauce, and 1/2 tablespoon of cornflour with 1/4 cup of water. Pour this mixture into the pan and cook for 2 minutes until the sauce thickens.

Add the fried mushrooms to the sauce and mix well. Cook for another 2 minutes, allowing the mushrooms to absorb the flavors of the sauce.

Garnish with chopped spring onion greens and serve hot.
