Mushroom And Leek Pie
Mushroom and Leek Pie is a delicious and hearty dish, perfect for a cozy dinner. The combination of earthy mushrooms, tender leeks, and a flaky pastry crust creates a mouthwatering experience. Clean and chop 500 grams of mushrooms and 2 large leeks. Set aside.

In a large pan, heat 2 tablespoons of oil over medium heat. Add the chopped leeks and cook for 5-7 minutes until softened.

Add the chopped mushrooms to the pan and cook for another 5-7 minutes until they release their moisture and become tender.

Stir in 2 tablespoons of all-purpose flour and cook for 2 minutes. Gradually add 250 ml of vegetable stock, stirring continuously to avoid lumps. Cook for 5 minutes until the mixture thickens.

Add 1 teaspoon of dried thyme, salt, and pepper to taste. Remove from heat and let the mixture cool.

Preheat the oven to 200°C. Roll out 500 grams of puff pastry on a lightly floured surface and cut it into two equal parts.

Place one part of the pastry on a greased pie dish, pressing it gently into the corners. Spoon the cooled mushroom and leek mixture onto the pastry.

Cover the pie with the second part of the pastry, sealing the edges with a fork. Make a few small slits on the top to allow steam to escape.

Brush the top of the pie with a beaten egg for a golden finish. Bake for 25-30 minutes until the pastry is golden and crisp.
