Moroccan Lentil Stew (harira)
Moroccan Lentil Stew, also known as Harira, is a hearty, flavorful, and nutritious dish made with dal, vegetables, and aromatic spices. It's a perfect comfort food that will leave you feeling satisfied and nourished. Ingredients: Spinach, Tomato, Mix dal, Garlic, Coriander, Bread, Onion, Carrot, Turmeric, Celery, Ginger, Tomato paste, Paprika, Salt, Cumin, Capsicum, Lemon, Chicken broth, Black pepper powder, Cooking oil

Rinse 200 grams of mixed dal (such as masoor, moong, and chana dal) thoroughly and soak them in water for 30 minutes. Drain and set aside.

In a large pot, heat 2 tablespoons of oil over medium heat. Add 1 finely chopped onion, 2 minced garlic cloves, and 1 teaspoon of grated ginger. Sauté until the onions are translucent and fragrant.

Add 1 chopped carrot, 1 chopped celery stalk, and 1 chopped bell pepper to the pot. Cook for 5 minutes, stirring occasionally.

Stir in 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 1/2 teaspoon of turmeric, 1/2 teaspoon of paprika, and 1/4 teaspoon of cayenne pepper. Cook for 1-2 minutes until the spices are fragrant.

Add the soaked and drained dal to the pot, along with 1.5 litres of vegetable broth or water. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30-40 minutes, or until the dal is tender.

Stir in 1 can (400 grams) of crushed tomatoes, 1 tablespoon of tomato paste, and salt to taste. Simmer for an additional 10 minutes.

Add 100 grams of chopped spinach or kale and cook for another 5 minutes, until the greens are wilted.

Remove the pot from the heat and stir in the juice of 1 lemon. Adjust the seasoning with salt and pepper, if needed.

Serve the Moroccan Lentil Stew hot, garnished with chopped fresh cilantro or parsley and a side of crusty bread or steamed rice.
