Methi Pakoda
Methi pakoda is a delicious and crispy Indian snack made with fresh fenugreek leaves, gram flour, and spices. It's perfect for enjoying with a hot cup of tea on a rainy day or as a tasty appetizer at gatherings.

Clean and wash 250 grams of fresh fenugreek (methi) leaves. Drain the water and finely chop the leaves.

In a mixing bowl, add the chopped methi leaves, 1 finely chopped onion, 1-2 finely chopped green chilies, 1 teaspoon grated ginger, and a few chopped coriander leaves.

Add 150 grams of gram flour (besan), 1/2 teaspoon red chili powder, 1/2 teaspoon turmeric powder, 1/2 teaspoon garam masala, 1/2 teaspoon ajwain (carom seeds), and salt to taste. Mix well.

Gradually add water to the mixture and combine until you get a thick batter consistency. Be careful not to add too much water, as the batter should be thick enough to hold its shape when dropped into hot oil.

Heat oil in a deep frying pan or kadai over medium heat. Once the oil is hot, drop spoonfuls of the batter into the oil, making sure not to overcrowd the pan.

Fry the pakodas until they turn golden brown and crispy, turning them occasionally to ensure even cooking. This should take about 3-4 minutes per batch.

Use a slotted spoon to remove the pakodas from the oil and place them on a paper towel-lined plate to drain excess oil.

Serve the methi pakodas hot with green chutney or tomato ketchup.
