Take 200 grams of mixed vegetables (carrots, capsicum, and onions), finely chopped.
In a bowl, mix the chopped vegetables with 100 grams of mayonnaise, 1/2 teaspoon of black pepper powder, and salt to taste. Set aside.
Take 8 slices of bread and remove the crusts. Flatten each slice using a rolling pin.
Spread the mayonnaise-vegetable mixture evenly on each flattened bread slice.
Roll each slice tightly and secure with a toothpick if needed.
Heat a non-stick pan on medium flame and add 2 tablespoons of oil.
Place the rolls in the pan and cook until they turn golden brown on all sides, turning occasionally.
Remove the rolls from the pan and let them cool for a minute. Slice each roll into 2-3 pieces and serve with ketchup or chutney.
