In a bowl, mix 500 grams of minced chicken or paneer with 1 finely chopped onion, 1 finely chopped green chili, 1 tablespoon ginger-garlic paste, 1/2 teaspoon turmeric powder, 1 teaspoon red chili powder, 1 teaspoon garam masala, 1 teaspoon cumin powder, 1 teaspoon coriander powder, salt to taste, and 2 tablespoons chopped coriander leaves. Mix well and let it marinate for 30 minutes.
Divide the marinated mixture into equal portions and shape them into burger patties.
Heat 2 tablespoons of oil in a non-stick pan over medium heat. Cook the patties for 4-5 minutes on each side until they are golden brown and cooked through.
In the meantime, slice 4 burger buns in half and toast them on a pan with a little butter until they are slightly crispy.
Assemble the burger by placing a lettuce leaf on the bottom half of the bun, followed by the cooked patty, a slice of tomato, a slice of onion, and a dollop of mint chutney or mayonnaise. Cover with the top half of the bun.
Serve the masala burgers hot with a side of fries or a salad.
