In a skillet, add 3 tablespoons of coconut oil and warm over medium heat.
Add 1 chopped onion, 1 chopped serrano chile pepper, and 2 chopped garlic cloves. Cook and stir until the onion is lightly browned, about 10 minutes.
Add 2 packages of cut tofu to the skillet and stir to coat.
Stir in 1 chopped and separated bunch of cilantro stems, 1/4 package of taco seasoning mix, 1 teaspoon of ground cumin, and 1 teaspoon of ground coriander into the tofu mixture.
Cook and stir the tofu mixture until fragrant and tofu is cooked through, about 5 minutes.
Add 2 peeled and cut mangoes and another 1/4 package of taco seasoning mix to the skillet. Cook for 3 to 5 minutes before stirring.
Add 1 pinch of chili powder and salt to taste. Stir to coat the tofu and mango mixture.
Season with more ground cumin and ground coriander if desired.
Simmer the tofu-mango mixture until most of the liquid has evaporated, about 10 more minutes.
Stir in the cilantro leaves 1 minute before serving.
