Lemon Coriander Soup
Lemon Coriander Soup is a tangy, aromatic, and refreshing appetizer that is perfect for any meal. The combination of lemon and coriander adds a burst of flavor to this light and healthy soup. In a deep pan, heat 1 tablespoon of oil. Add 1/2 teaspoon of finely chopped garlic and 1/4 cup of finely chopped onions. Sauté until the onions turn translucent.

Add 1/4 cup of finely chopped carrots, 1/4 cup of finely chopped cabbage, and 1/4 cup of finely chopped capsicum. Cook for 2-3 minutes on medium flame.

Add 1 liter of vegetable stock or water to the pan and bring it to a boil. Reduce the heat and let it simmer for 10-12 minutes.

In a small bowl, mix 2 tablespoons of cornflour with 1/4 cup of water to make a smooth paste. Add this paste to the simmering soup, stirring continuously to avoid lumps. Cook for another 2-3 minutes until the soup thickens slightly.

Add salt to taste and 1/4 teaspoon of black pepper powder. Mix well.

Turn off the heat and add 2 tablespoons of freshly squeezed lemon juice and 1/4 cup of finely chopped fresh coriander leaves. Stir well to combine.
