Lemon Coriander Paneer

Cut 250g of paneer into small cubes.

Coat the paneer cubes with 2 tablespoons of cornflour.

Deep fry the paneer cubes until they turn golden brown.

Set the fried paneer cubes aside.

Wash and chop the roots of 1 bunch of fresh green coriander leaves.

Place the chopped coriander in a food mixer and add 2 tablespoons of lemon juice.

If needed, add a little vegetable stock to help blend the coriander mixture.

Blend until it becomes a smooth paste.

In a non-stick pan, sauté 1 chopped onion until it becomes translucent.

Add 1 teaspoon of ginger garlic paste and the coriander-onion paste to the pan.

Add 1 cup of vegetable stock, salt to taste, and the remaining cornflour to the pan.

Let the mixture reduce until it thickens.

Add the fried paneer cubes to the pan.

Wait for the mixture to boil, then turn off the heat.

Serve the Lemon Coriander Paneer hot.
