Peel 100 grams of garlic cloves and keep them aside.
Take 50 grams of dried red chillies, remove the stems and soak them in warm water for about 30 minutes.
After 30 minutes, drain the water and grind the chillies along with the peeled garlic, 1 teaspoon of salt, and 2 tablespoons of vinegar into a smooth paste. You can add a little water if required.
Heat 2 tablespoons of oil in a pan on medium heat. Add the ground paste to the pan and cook for about 10-15 minutes, stirring continuously until the raw smell of garlic goes away.
Allow the chutney to cool down before transferring it to a clean, dry jar. Store it in the refrigerator and use as required.
