Lauki Halwa

Peel and grate 500 grams of bottle gourd (lauki). Squeeze out the excess water from the grated lauki and set it aside.

In a heavy-bottomed pan, heat 2 tablespoons of ghee on medium flame. Add the grated lauki and sauté for 5-7 minutes until it becomes soft and the raw smell disappears.

Add 500 ml of full-fat milk to the pan and mix well. Cook the mixture on medium flame, stirring occasionally, until the milk is absorbed and the lauki is cooked well.

Add 100 grams of sugar to the mixture and stir well. Cook for another 5-7 minutes until the sugar dissolves and the halwa thickens.

In a separate pan, heat 1 tablespoon of ghee and roast a handful of chopped cashews and almonds until golden brown. Add the roasted nuts to the halwa and mix well.

Finally, add 1/2 teaspoon of cardamom powder to the halwa and mix well. Cook for another 2 minutes and then turn off the flame.
