In a bowl, mix 40 grams of chia seeds with 250 ml of milk (preferably almond or coconut milk) and 2 tablespoons of honey. Stir well to combine.
Cover the bowl and refrigerate for at least 4 hours or overnight, allowing the chia seeds to absorb the liquid and form a pudding-like consistency.
Meanwhile, peel and chop 3 ripe kiwis into small pieces.
Once the chia pudding has set, remove it from the refrigerator and give it a good stir to break up any clumps.
In serving glasses or bowls, layer the chia pudding and chopped kiwi, alternating between the two until the glasses are filled.
Garnish with a few mint leaves and serve chilled.
