Fill a pot with 6 cups of cold water and add 1/4 teaspoon of salt.

Add 2 cups of sliced carrots to the pot and bring to a boil.

Cook the carrots until almost done, then strain and place in ice water (skip this step if serving immediately).

In a sauté pan, melt 2 tablespoons of butter over medium heat.

Add the cooked carrots to the pan and heat through, finishing their cooking process.

Stir in 1 tablespoon of honey and 3/4 teaspoon of ground cardamom.

Toss the carrots to coat evenly, adjust salt if needed, and serve.
