Gur Pare (jaggery Crispy Snacks)
Gur pare is a delicious and crispy Indian snack made with jaggery, wheat flour, and ghee. These sweet treats are perfect for festive occasions and can be enjoyed with a cup of tea or coffee. Ingredients: Jaggery, Atta, Ghee, Salt, Cooking oil

In a mixing bowl, combine 250 grams of wheat flour, a pinch of salt, and 60 grams of ghee. Mix well until the mixture resembles breadcrumbs.

In a separate pan, heat 200 grams of jaggery with 1/4 cup of water on low flame. Stir continuously until the jaggery melts and forms a thick syrup.

Pour the jaggery syrup into the wheat flour mixture and knead it into a firm dough. If needed, add a little water to bring the dough together.

Cover the dough and let it rest for 15-20 minutes.

Preheat oil in a deep frying pan or kadai for deep frying.

Divide the dough into equal portions and roll each portion into a 1/4-inch thick circle.

Cut the rolled dough into small diamond shapes using a knife or a cutter.

Carefully slide the diamond-shaped gur pare into the hot oil and deep fry them on medium flame until they turn golden brown and crispy.

Remove the fried gur pare from the oil and place them on a paper towel to absorb excess oil.

Allow the gur pare to cool completely before storing them in an airtight container.
