Gujiya
Gujiya is a delicious Indian sweet, made with a crispy outer layer filled with a scrumptious mixture of khoya, dry fruits, and sugar, perfect for festive occasions like Holi and Diwali. Ingredients: Khoya, Maida, Dry fruit, Bura, Salt, Ghee, Cooking oil

In a bowl, mix 250 grams of maida (all-purpose flour) with 60 grams of ghee (clarified butter) and a pinch of salt. Knead the mixture into a firm dough using water as needed. Cover the dough and let it rest for 30 minutes.

In a pan, heat 200 grams of khoya (mawa) on low flame until it becomes soft. Add 100 grams of powdered sugar and mix well. Cook for 2-3 minutes and then remove from heat.

Add 50 grams of chopped dry fruits (cashews, almonds, and raisins) to the khoya mixture and mix well. Let the mixture cool down.

Divide the dough into small equal-sized balls. Roll each ball into a small circle (about 10 cm in diameter).

Place a spoonful of the khoya mixture in the center of each circle. Fold the circle in half, enclosing the filling, and seal the edges using a little water. You can use a gujiya mold or press the edges with a fork to create a decorative pattern.

Heat oil in a deep frying pan. Once the oil is hot, gently slide the gujiyas into the oil and fry them on medium heat until they turn golden brown. Remove the gujiyas from the oil and place them on a paper towel to drain excess oil.

Allow the gujiyas to cool completely before serving or storing in an airtight container.
