Guava Kheer

Take 500 grams of ripe guavas, wash them thoroughly, and cut them into small pieces. Remove the seeds and set the guava pieces aside.

In a heavy-bottomed pan, heat 1 liter of full-fat milk on medium flame. Keep stirring occasionally to prevent it from sticking to the bottom.

Once the milk starts boiling, reduce the flame and let it simmer for 10-15 minutes until it thickens slightly.

Add 100 grams of sugar to the milk and stir well until the sugar dissolves completely.

Now, add the chopped guava pieces to the milk and mix well. Cook for another 5-7 minutes on low flame.

In a small pan, heat 1 tablespoon of ghee and add 1/4 teaspoon of cardamom powder and a pinch of saffron strands. Fry for a few seconds until the aroma is released.

Pour the ghee mixture into the guava kheer and mix well. Cook for another 2-3 minutes.

Turn off the flame and let the kheer cool down to room temperature. Then, refrigerate it for at least 2 hours before serving.
