Take 4 slices of bread (preferably white or whole wheat) and spread a thin layer of softened butter on one side of each slice.
Place a non-stick pan or tawa on medium heat. Once heated, place one slice of bread with the buttered side facing down on the pan.
Add 50 grams of grated cheese (cheddar or mozzarella) evenly on top of the bread slice in the pan. You can also add a combination of both cheeses for a richer taste.
Place another slice of bread on top of the cheese layer with the buttered side facing up.
Cook the sandwich for 2-3 minutes or until the bottom slice turns golden brown. Carefully flip the sandwich and cook the other side for another 2-3 minutes until it's also golden brown and the cheese has melted.
Remove the sandwich from the pan and let it cool for a minute. Use a sharp knife to cut the sandwich diagonally into two halves.
Repeat steps 2-6 for the remaining bread slices and cheese to make the second sandwich.
