Take 250 grams of fresh or frozen green peas and boil them in water for 5-7 minutes until they become soft. Drain the water and let the peas cool down.
In a mixer grinder, add the boiled green peas, 1 chopped green chili, a small piece of ginger, 2 cloves of garlic, and a handful of fresh coriander leaves. Grind the mixture to form a coarse paste.
Transfer the green pea paste to a mixing bowl. Add 100 grams of gram flour (besan), 1/2 teaspoon of red chili powder, 1/2 teaspoon of turmeric powder, 1/2 teaspoon of garam masala, 1/2 teaspoon of chaat masala, and salt to taste. Mix well to form a thick batter.
Heat oil in a deep frying pan over medium heat. Once the oil is hot, drop spoonfuls of the green pea batter into the oil, making sure not to overcrowd the pan.
Fry the fritters for 3-4 minutes on each side, or until they turn golden brown and crispy. Use a slotted spoon to remove the fritters from the oil and place them on a paper towel to drain excess oil.
Serve the green pea fritters hot with mint chutney or tomato ketchup.
