Ingredients: Potato, Tomato, Olive oil, Oregano, Garlic
Heat 1/3 cup of olive oil in a large sauté pan over medium heat.
Add 1.2 kg of peeled and cubed potatoes to the pan and stir.
Stir in 2 cloves of minced garlic.
Add 3/4 cup of pitted kalamata olives and cook, stirring for several minutes.
Stir in 1 1/3 cups of chopped tomatoes and 1 teaspoon of oregano.
Reduce heat, cover the pan, and let it simmer for 30 minutes or until the potatoes are tender.
