Preheat the oven to 250°C.
Prepare the pizza dough: In a large bowl, mix 500 grams of all-purpose flour, 1 teaspoon of salt, 1 teaspoon of sugar, and 7 grams of instant yeast. Gradually add 300 ml of warm water and 2 tablespoons of olive oil, mixing until a soft dough forms. Knead the dough for 10 minutes, then cover and let it rest for 1 hour.
Roll out the dough on a lightly floured surface to your desired thickness.
Transfer the rolled-out dough to a greased pizza tray or a baking sheet lined with parchment paper.
Spread a thin layer of pizza sauce (store-bought or homemade) over the dough, leaving a small border around the edges.
Choose your gourmet toppings, such as sliced bell peppers, onions, olives, paneer, mushrooms, sun-dried tomatoes, and fresh basil leaves. Arrange them evenly over the sauce.
Sprinkle a generous amount of grated mozzarella cheese and a little bit of crumbled feta cheese over the toppings.
Drizzle some olive oil over the pizza and season with salt, pepper, and dried oregano.
Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
Remove the pizza from the oven, let it cool for a few minutes, and then slice and serve.
