Peel and grate 1-inch (2.5 cm) of fresh ginger.
In a saucepan, add 2 cups (500 ml) of water and the grated ginger. Bring the mixture to a boil.
Once boiling, reduce the heat to low and let it simmer for 5-10 minutes, depending on how strong you want the ginger flavor to be.
Strain the ginger-infused water into cups, discarding the ginger pieces.
Add 1 teaspoon (5 ml) of honey and 1 teaspoon (5 ml) of lemon juice to each cup, stirring well to combine.
Serve the ginger tea hot and enjoy!
