Place 1 package of rice noodles in a large pot and cover with lukewarm water.

Soak noodles for 30 minutes until softened, then bring to a boil.

Cook noodles, stirring occasionally, until tender yet firm to the bite, about 3 minutes. Drain and return to the pot.

In a small saucepan, combine 2 cups of chicken stock, 1 cup of water, and 2 chopped lemongrass stalks.

Bring to a boil, then simmer for 5 minutes until fragrant. Strain out lemongrass and discard.

Crush 1 cup of peanuts using a mortar and pestle.

Toast peanuts in a wok or large skillet over medium heat for 2-3 minutes until fragrant. Transfer to a bowl.

Toast 1/2 cup of coconut powder in the wok until golden brown and fragrant, about 2-3 minutes. Transfer to a bowl.

In a large bowl, place 450 grams of boneless sliced chicken breast and coat with 1/4 cup of oyster sauce, 2 tablespoons of fish sauce, 2 tablespoons of dark soy sauce, 2 teaspoons of salt, and 2 teaspoons of ground black pepper.

Heat 1 teaspoon of peanut oil in the wok over medium-high heat.

Add chicken mixture and 1/2 cup of chopped ginger, cook and stir for about 2 minutes per side until browned. Remove from the wok.

Heat another 1 teaspoon of peanut oil in the wok over medium-high heat.

Add 1 small chopped Spanish onion, 2 seeded chopped jalapeno peppers, 4 chopped garlic cloves, and 1 seeded chopped habanero pepper. Sauté for 2 minutes until fragrant.

Add 1 large cut carrot, 1 large sliced yellow bell pepper, 1 small sliced green bell pepper, and 4 small sliced radishes. Cook and stir for 1 minute.

Stir in 1 large sliced king oyster mushroom, 2 tablespoons of red curry paste, and 1 teaspoon of curry powder for 1-2 minutes until well combined.

Pour the strained broth and 1/4 cup of white wine into the wok. Cook until reduced, about 5 minutes.

Stir in 1/2 of the toasted peanuts and all the toasted coconut. Simmer for 2 minutes.

Add the cooked chicken and continue simmering until chicken is no longer pink in the center and sauce has reduced to about 1 1/2 cups, about 5 minutes.

Pour chicken and sauce over noodles in the pot, add remaining peanuts. Stir over low heat for 2-3 minutes until well combined.

Pour in the juice of 1/4 lime wedge and garnish with 5 chopped cilantro sprigs.
