Ginger Chutney
A spicy and tangy treat - This Ginger Chutney is a must-try for any foodie! Ingredients: Ginger, Coconut, Coconut oil, Coriander seeds, Curry leaves, Green chilli, Methi seeds, Mustard seeds, Salt, Tamarind paste

Peel and cut the 2-inch ginger into fine slices, then into julienne strips. Set aside.

Dilute 1/2 cup of tamarind paste in 1/2 cup of water and set aside.

Grind 1 teaspoon of coriander seeds, 1/4 teaspoon of cumin seeds, and 1/4 teaspoon of ground turmeric into a fine powder using a coffee grinder or mortar and pestle.

Mix the ground spices with 1 tablespoon of water to form a paste. Set aside.

Heat 1 teaspoon of coconut oil in a small pan over medium-high heat.

Add 1 tablespoon of grated coconut, reduce heat to low, and stir-fry for 3-4 minutes until golden brown. Be cautious as the coconut can burn easily. Set aside.

In a heavy-bottomed medium-sized pan, heat over medium heat and add 1/4 teaspoon of brown mustard seeds.

Once the mustard seeds start to pop and splutter, add 1/4 teaspoon of fenugreek seeds, 4 hot red chilies, and 10-15 curry leaves.

Stir and fry for 1-2 minutes before adding 1 small chopped red onion, 1-2 chopped hot green chili peppers, and the prepared ginger.

Cook while stirring for 4-5 minutes until the onion is golden brown and softening.

Add the prepared spice paste and continue to stir and fry until the mixture becomes dry.

Add the diluted tamarind paste, 1 teaspoon of salt, and 2 teaspoons of brown sugar.

Stir and cook for 10-12 minutes until the mixture thickens. Add a little water if needed to prevent sticking.

Mix in the cooked grated coconut.

Transfer the chutney to a clean, airtight container or jar. It can be stored in the fridge for months.
