In a large mixing bowl, combine 2 cups of whole wheat flour (atta) and 1/2 teaspoon of salt. Gradually add water (approximately 3/4 cup) and knead the mixture to form a soft and smooth dough. Cover the dough with a damp cloth and let it rest for 20-30 minutes.
Divide the dough into 8 equal portions and shape them into balls. Roll out each ball into a small circle (about 4 inches in diameter) using a rolling pin.
Apply 1 teaspoon of ghee on the rolled-out circle and sprinkle some dry flour over it. Fold the circle in half to form a semi-circle, and then fold it again to form a triangle.
Roll out the triangle into a larger triangle, maintaining the shape. Repeat the process for all the dough balls.
Preheat a tawa or griddle over medium heat. Place the rolled-out paratha on the tawa and cook for 1-2 minutes until small bubbles appear on the surface.
Flip the paratha and cook the other side for 1-2 minutes. Apply some ghee on the cooked side and flip again. Apply ghee on the other side as well and cook both sides until golden brown and crispy.
Remove the paratha from the tawa and gently press it between your palms to make it flaky. Serve hot with your favorite curry, pickle, or yogurt.
