Wash and chop 1 kg of mixed fruits (such as apples, bananas, grapes, oranges, pomegranate seeds, and papaya) into bite-sized pieces.
In a large mixing bowl, combine the chopped fruits.
In a small bowl, mix 1 teaspoon chaat masala, 1 teaspoon roasted cumin powder, 1/2 teaspoon black salt, 1/2 teaspoon red chili powder, and 2 tablespoons lemon juice to make the dressing.
Pour the dressing over the chopped fruits and gently mix until all the fruits are well coated.
Refrigerate the fruit chaat for 30 minutes to allow the flavors to blend.
Before serving, garnish with a handful of chopped fresh mint leaves and a sprinkle of additional chaat masala, if desired.
