Chop 450 grams of potatoes into small pieces.
Heat 2 tablespoons of vegetable oil in a pan and sauté the potatoes.
In a separate pan, dry roast the following ingredients: 1/2 teaspoon channa dal, 1/2 teaspoon urad dal, 1 dried red chili, 1/2 teaspoon cumin seeds, 1/2 teaspoon white sesame seeds, 1/2 teaspoon unsweetened coconut, 1 teaspoon peanuts
Transfer the roasted ingredients to a spice grinder or magic bullet and grind into a powder.
In a pan, heat 1 tablespoon of vegetable oil and add the following ingredients until crackling: 5 dried red chilies, 1 teaspoon mustard seeds, 1 teaspoon urad dal, 1 teaspoon cumin seeds
Add 1 small sliced onion to the pan and sauté.
Stir in 1 teaspoon turmeric, 5 small green chilies, and 15-20 curry leaves.
Add the fried potatoes to the pan and mix well.
Stir in 1 chopped bunch of mint, 1 chopped bunch of coriander, and the roasted powder.
