Four Cheese Roasted Vegetables

Preheat the oven to 425 degrees F.

Peel and cut 2 russet potatoes and 2 carrots.

Place the potatoes and carrots in a greased 13x9 inch baking dish.

Drizzle 1 tablespoon of olive oil over the vegetables.

Sprinkle 1 teaspoon of basil, 1 teaspoon of oregano, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper over the vegetables.

Toss the vegetables lightly to coat them evenly with the seasonings.

Bake the vegetables in the preheated oven for 20 minutes.

Cut 1 large zucchini and 1 large red bell pepper.
