Preheat the oven to 200°C.
Prepare the pizza dough by mixing 500 grams of all-purpose flour, 1 teaspoon of sugar, 1 teaspoon of salt, 1 tablespoon of olive oil, and 1 packet of instant yeast in a large bowl. Gradually add 300 ml of warm water and knead the dough until it becomes smooth and elastic. Cover the dough and let it rest for 1 hour.
While the dough is resting, chop 1 onion, 1 capsicum, 1 tomato, and 100 grams of paneer into small cubes. Slice 100 grams of mushrooms and 1 small zucchini.
In a pan, heat 1 tablespoon of oil and sauté the chopped vegetables for 3-4 minutes until they are slightly cooked but still crunchy. Set aside.
Roll out the rested pizza dough into a large circle, about 1 cm thick. Place it on a greased pizza tray or baking sheet.
Spread 200 grams of pizza sauce evenly over the dough, leaving a small border around the edges.
Sprinkle 200 grams of grated mozzarella cheese over the sauce.
Arrange the sautéed vegetables and paneer evenly on top of the cheese.
Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
Remove the pizza from the oven, let it cool for a few minutes, and then slice and serve.
