Egg Schezwan Noodles
Egg Schezwan Noodles is a delicious Indo-Chinese dish that combines the flavors of spicy Schezwan sauce with the goodness of eggs and noodles, making it a perfect meal for any time of the day. Boil 200 grams of noodles as per the instructions on the packet. Drain the water and rinse the noodles with cold water. Set aside.

In a pan, heat 2 tablespoons of oil. Add 2 beaten eggs and scramble them until cooked. Remove the eggs from the pan and set aside.

In the same pan, add 1 tablespoon of oil and sauté 1 finely chopped onion, 1 tablespoon of minced garlic, and 1 tablespoon of minced ginger until the onions turn translucent.

Add 1/2 cup of chopped bell peppers, 1/2 cup of chopped carrots, and 1/2 cup of chopped cabbage. Cook the vegetables for 3-4 minutes until they are slightly tender.

Stir in 3 tablespoons of Schezwan sauce and mix well with the vegetables.

Add the cooked noodles and scrambled eggs to the pan. Toss everything together until the noodles are well coated with the sauce and vegetables.

Garnish with chopped spring onion greens and serve hot.
