Remove seeds from 250 grams of dates and chop them into small pieces.
In a pan, dry roast 50 grams of almonds, 50 grams of cashews, and 50 grams of pistachios on low heat for 3-4 minutes. Let them cool and then coarsely chop them.
In a non-stick pan, heat 1 tablespoon of ghee on low heat. Add the chopped dates and cook for 5-6 minutes, stirring continuously until they become soft and form a thick paste.
Add the chopped nuts, 1/4 teaspoon of cardamom powder, and a pinch of nutmeg powder to the dates paste. Mix well and cook for another 2-3 minutes.
Grease a plate or tray with ghee and transfer the dates-nuts mixture onto it. Flatten the mixture evenly using a spatula or the back of a spoon.
Allow the mixture to cool for 10-15 minutes. Once it's slightly cooled, cut the mixture into square or diamond-shaped barfis.
Let the barfis cool completely and then store them in an airtight container.
