Custard Apple Kheer

Take 4-5 ripe custard apples, peel them, and remove the seeds. Collect the pulp in a bowl and set aside.

In a heavy-bottomed pan, heat 1 liter of full-fat milk on medium flame. Keep stirring occasionally to prevent it from sticking to the bottom.

Once the milk starts boiling, reduce the flame and let it simmer for 10-15 minutes until it thickens slightly.

Add 100 grams of sugar to the milk and stir well. Cook for another 5 minutes until the sugar dissolves completely.

Now, add the custard apple pulp to the milk and mix well. Cook for another 5-7 minutes on low flame.

In a small pan, heat 1 tablespoon of ghee and roast 10-12 chopped almonds and 10-12 chopped cashews until golden brown.

Add the roasted nuts to the custard apple kheer and mix well. Turn off the flame and let the kheer cool down to room temperature.

Refrigerate the kheer for at least 2 hours before serving. Serve chilled, garnished with a few strands of saffron and some more chopped nuts.
