Wash and peel 2 medium-sized cucumbers. Cut them into thin slices or small cubes, as per your preference.
Cut 2 ripe avocados in half, remove the seed, and scoop out the flesh. Cut the avocado into small cubes.
Finely chop 1 small red onion and a handful of fresh coriander leaves.
In a large mixing bowl, combine the cucumber, avocado, red onion, and coriander leaves.
In a separate small bowl, prepare the dressing by whisking together 2 tablespoons of lemon juice, 2 tablespoons of olive oil, 1 teaspoon of cumin powder, salt, and black pepper to taste.
Pour the dressing over the salad and gently toss to combine all the ingredients. Adjust the seasoning if needed.
Refrigerate the salad for 15-20 minutes to allow the flavors to meld.
Serve chilled, garnished with a few more coriander leaves if desired.
