Prepare the patty: In a bowl, mix 200 grams of boiled and mashed potatoes, 100 grams of grated paneer, 50 grams of finely chopped onions, 2 finely chopped green chilies, 1 teaspoon ginger-garlic paste, 1/2 teaspoon garam masala, 1/2 teaspoon red chili powder, salt to taste, and 2 tablespoons of chopped coriander leaves. Mix well and form into 4 equal-sized patties.
Coat the patties: In a separate bowl, whisk 1 egg. Dip each patty into the egg mixture, then coat with breadcrumbs. Set aside.
Heat oil in a pan over medium heat. Shallow fry the patties until they are golden brown and crispy on both sides. Drain on paper towels.
Assemble the burger: Slice 4 burger buns in half. On the bottom half of each bun, spread 1 tablespoon of mayonnaise, followed by a layer of lettuce leaves. Place the crispy patty on top, then add a slice of tomato and a slice of onion. Drizzle with 1 tablespoon of tomato ketchup and 1 tablespoon of green chutney. Cover with the top half of the bun.
Serve immediately with a side of fries or a salad.
