Preheat oven to 350°F (175°C) and grease 2 baking sheets.
In a large bowl, beat 1/2 cup softened butter, 1/2 cup white sugar, and 1/2 cup brown sugar with an electric mixer until creamy (1-2 minutes).
Beat in 1 egg, 1 teaspoon ground ginger, and 1 pinch salt.
Gradually add 2 cups self-rising flour to the mixture until the cookie dough comes together (1-2 minutes).
Fold in 1 cup chopped crystallized ginger.
Place 2 tablespoons white sugar in a shallow dish.
Shape dough into balls and roll one side in sugar.
Press the dough balls onto the prepared baking sheets.
Bake in the preheated oven until golden brown (10-15 minutes).
