Crispy Chilli Corn
Crispy Chilli Corn is a delicious Indo-Chinese appetizer that combines the crunchiness of corn with the spiciness of chillies, making it an irresistible treat for your taste buds. Ingredients: Sweet corn kernels, Green chilli, Onion, Corn starch, Capsicum, Maida, Soy sauce, Cooking oil, Vinegar, Ginger, Black pepper powder, Red chilli sauce, Garlic, Spring onion, Salt, Tomato sauce

In a bowl, mix 200 grams of corn kernels (boiled and drained), 2 tablespoons of cornflour, 2 tablespoons of all-purpose flour (maida), salt to taste, and a pinch of black pepper. Mix well to coat the corn kernels evenly.

Heat oil in a deep frying pan or kadai for deep frying. Once the oil is hot, carefully add the coated corn kernels in small batches and fry until they turn golden brown and crispy. Remove from oil and place on a paper towel to drain excess oil.

In another pan, heat 2 tablespoons of oil. Add 1 tablespoon of finely chopped garlic, 1 tablespoon of finely chopped ginger, and 2-3 chopped green chillies. Sauté for a minute or until fragrant.

Add 1 medium-sized chopped onion and 1 chopped capsicum to the pan. Sauté for 2-3 minutes until they turn slightly soft.

In a small bowl, mix 2 tablespoons of tomato ketchup, 1 tablespoon of red chilli sauce, 1 tablespoon of soy sauce, and 1 tablespoon of vinegar. Pour this sauce mixture into the pan and cook for a minute.

Add the fried corn kernels to the pan and toss well to coat them evenly with the sauce. Cook for another 2-3 minutes.

Garnish with chopped spring onion greens and serve hot.
