Melt 2 tablespoons of butter in a large pot.

Add 1 small diced onion and cook until slightly browned, about 5 minutes.

Stir in 1 teaspoon of saffron thread, 1/2 teaspoon of crushed turmeric, 1/2 teaspoon of cumin, 1 teaspoon of ground fenugreek, and 1/2 teaspoon of crushed red pepper flakes. Cook for another 3 minutes.

Add 3 medium diced apples and stir for another 3 minutes, ensuring everything is coated with the seasoning.

Add 1 large diced head of cauliflower and cook for another 3 minutes, stirring frequently to coat.

Pour in 4 cups of low sodium vegetable broth and cook on medium heat for 20 minutes or until cauliflower is tender, stirring occasionally.

Stir in 1 cup of half and half, 1 tablespoon of kosher salt, and 1 teaspoon of ground black pepper, adjusting to suit your personal taste.

Use an immersion blender to puree the solid ingredients in the pan, or transfer to a food processor in batches and then return to the pot.
