Preheat the oven to 180°C. Grease and flour a 9-inch round cake pan.

In a bowl, mix 200 grams of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of baking soda. Set aside.

In another bowl, beat 100 grams of softened unsalted butter and 150 grams of granulated sugar until light and fluffy.

Add 2 large eggs, one at a time, to the butter-sugar mixture, beating well after each addition.

Stir in 1 teaspoon of vanilla extract and 1 tablespoon of instant coffee powder dissolved in 2 tablespoons of hot water.

Gradually add the flour mixture to the wet ingredients, alternating with 120 ml of whole milk, beginning and ending with the flour mixture. Mix until just combined.

Pour the batter into the prepared cake pan and spread it evenly.

Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
