Coconut Rava Kesari

Heat 2 tablespoons of ghee in a pan and roast 1 cup of rava (semolina) on low flame until it turns golden brown and releases a nice aroma. Keep stirring to avoid burning.

In another pan, boil 2 cups of water and add 1 cup of grated coconut. Cook for 2-3 minutes on medium flame.

Slowly add the roasted rava to the boiling coconut water, stirring continuously to avoid lumps. Cook for 3-4 minutes on low flame until the rava absorbs the water and becomes soft.

Add 1 cup of sugar to the rava mixture and mix well. Cook for another 5-7 minutes on low flame until the sugar dissolves and the mixture thickens.

Add 1/4 teaspoon of cardamom powder and mix well. Cook for another 2 minutes.

Finally, heat 1 tablespoon of ghee in a small pan and fry 10-12 cashews and 2 tablespoons of raisins until golden brown. Pour this over the prepared kesari and mix gently.
