In a food processor, blend 1/2 chopped onion, 1 can of green chilies, 1 tablespoon minced garlic, and juice of 1 lime until smooth.
Add 1/2 bunch of chopped cilantro to the food processor and pulse until the cilantro is finely chopped and mixed into the mixture.
In a saucepan, bring 3 cups of water to a boil.
Stir the cilantro mixture, 4 teaspoons of chicken bouillon granules, 1 teaspoon of salt, 1 tablespoon of softened butter, and 3 cups of uncooked rice into the boiling water.
Return the mixture to a boil, then reduce heat to medium-low and cover the saucepan.
Simmer for about 20 minutes, or until the rice has absorbed the liquid entirely.
