Heat 1 quart of oil in a deep fryer to 375°F (190°C).

Add the 4 large cubed potatoes and cook until golden brown, about 8 minutes.

Drain the potatoes on paper towels.

In a separate large skillet, heat 1 teaspoon of vegetable oil over medium heat.

Add 2 cups of chopped cilantro and 4 minced garlic cloves, cook and stir for about 5 minutes.

Add the drained potatoes to the skillet.

Add 1/2 teaspoon of cumin, 1 tablespoon of lemon juice, and salt to taste.
